It all started in 2018 …

Chef Jake Bukowski decided to pivot from managing other people’s kitchens to establishing his own. With over 20 years of experience, he returned to his childhood neighborhood of Fishtown, Philly, to open The Galley, which offers a gastropub menu––specializing in homemade pierogi. Chef Jake drew upon the Polish tradition, but added his culinary expertise to refine the dough recipe and pierogi-rolling process. The result is a unique, handcrafted pierogi that is flavorful, juicy, chewy, and crunchy.

Selling pre-frozen pierogi by the dozen even helped The Galley survive the pandemic when restaurants were closed. Chef Jake reopened The Galley at Garage Fishtown in 2020 as the permanent kitchen resident. There, he also serves delicious classics like burgers, quesadillas, and chicken wings.

Additionally, The Galley caters events––large and small––year round.. Chef Jake often pops-up at festivals and fairs to share his spectacular food with loyal followers and to create new ones!
